Black Winter Périgord Truffles - Tuber melanosporum - France, Italy, Spain, New Zealand, Australia, United States, considered the king of all truffles, due to their powerful and distinct aroma and unique taste. A small amount of this truffle can easily transform a simple meal into a gourmet taste experience. Black truffles go best with foods that absorb their flavor and aroma, such as egg and pasta dishes, and are usually available fresh from mid-November through late March.
Summer Truffle - Tuber aestivum - France, Italy, Spain, as their name implies, begin their production in summer. These are available fresh from June through August. The milder flavor of these truffles makes them a perfect complement to lighter meals.
Burgundy Truffle - Tuber uncinatum - France, follow close behind the summer truffle. Their prime growing season is from mid-September through October.
White Truffles - Tuber magnatum - Italy, known to some as the "Diamond of Italy," are arguably the most sought-after truffles. They are only harvested from mid-November to mid-December.
