Truffle Scrambled Eggs

One of our favorite ways to enjoy truffles. It's not just for breakfast.  Try it for a princely lunch or even dinner dish!

Ingredients

♦ 3 eggs
♦ 1 oz. truffles
♦ 1 t. crème fraîche
♦ Unsalted butter
♦ Salt & white pepper to taste

Directions

Beat the eggs, and season with salt and pepper. Slice half of the truffles, and add to the beaten eggs. Let sit 1/2 hour. Melt 1 oz. butter in a double boiler. Add the eggs, and cook slowly over low heat, stirring constantly. Add the crème fraîche. When nearly done, slice the remaining truffle on top of the eggs. Then turn the eggs so the truffle blends in. Serve immediately.
